For this recipe you need to do something the night or morning before.
Extra supplies needed: a kitchen processor
For two persons:
– 100g soy yogurt
– 1 teaspoon arrowroot
– 1 apple
– 1 1/2 tablespoon hazelnut butter
– 1 tablespoon oat milk
– 10 hazelnuts
– 1/2 teaspoon honey (completely vegan alternatives are agave syrup and sugar)
– 1/2 teaspoon cinnamon
Add the yogurt and the arrowroot together and put in the freezer for a night or a whole day.
Let the yogurt defreeze a little before using until you can get the yogurt out of your container.
Cut the apple and hazelnuts into small pieces. Bake the apples with the hazelnuts and cinnamon on moderate fire for around 5 minutes until the apples are soft and a little brown.
Add the yogurt with the hazelnut butter, oat milk and honey to the food processor and mix until it’s ice cream. If you have an ice cream scoop you can make scoops.
Serve the apples with the ice cream.
