Of all the dried fruit dried plums are ones of those that I like most: when they are still juicy and not dry. You can also buy them with the seeds still in there (mostly in Turkish or Moroccan stores) which makes them even juicier. A further benefit is that plums grow here very well.
The hazelnut flour is a very nice addition to these cookies but don’t be sad if you don’t have it: you can exchange the amount of flour for spelt flour. You can also make your own hazelnut flour of hazelnuts.
What is also very nice about these cookies is that your blood sugar levels are not affected in very large amounts. There is still sugar in these cookies though. They are also done quick. They are good for if you suddenly have a nice appetite. These give more satisfaction then one out of a package (most of them), at least in my experience.
For about 8 cookies:
– 100 gram spelt flour
– 25 gram hazelnut flour
– 25 plant-based butter
– 1/2 tablespoon apple syrup (the Dutch appelstroop)
– 3 tablespoons water
– 25 gram dried plums (without the seeds)
– 20 gram white chocolate (vegan if you want vegan)
Preheat the oven to 374°F/190°C. Put a baking sheet on the baking tray.
Add the flour, butter, syrup and water together and knead into a ball of dough or use a food processor to make the dough.
Cut the dried plums into half and cut the white chocolate into small chips when necessary. Add the plums and white chocolate to the dough.
Make balls with your hands out of the dough for the cookies. Knead them into cookies and put them on the baking sheet. Bake the cookies around 17 minutes.
