Pancakes you can make in a lot of different ways. There are different combinations with flour, milk, egg and egg-substitutes. They are all a little bit different in taste and structure. This pancake is similar as how it is made a lot of the time only oat milk is used instead of cow milk.
A positive side about this pancake is that it does not fall apart quick and it spreads easily over the bottom of the pan. It does not stick to the pan easily. The egg makes it airy. The taste is good and quite neutral. That makes the pancake good for different applications. You can also roll it easily without it getting cracks. You don’t need many different ingredients for the batter. On the other hand this pancake is not suitable for vegans or people who are allergic to gluten.
I accidently typed sunday breakfeast instead of breakfast. I’ll let it be that way.
For 3 pancakes
For the batter:
– 100g wheat flour
– 150ml oat milk
– 1 animal-friendly egg
– (plant-based) butter
On top:
– animal-friendly young or young mature cheese
– spinach
– smoked paprika powder
– chocolate-hazelnutpaste. 1 tablespoon for each pancake.
– blueberries. 1 tablespoon for each pancake.
– (soy) yogurt. 1 tablespoon for each pancake.
Preheat the oven to 190°C/374°F if you make the chocolate-hazelnutpaste yourself. Whisk the ingredients of the batter together and let it sink in while preparing the other ingredients.
Make the chocolate-hazelnutpaste. Slice cheese or do that later above the pan. Defreeze the blueberries if needed. I use them often out of the freezer.
Pancake I (cheese/spinach):
Preheat a medium frying pan to 220 degrees. Put butter in there and let it become hot. Put 1/3rd of the batter into the pan and let it spread over the bottom. Wait until the pancake is brown on the underside. Then turn it. Put the heat to 200 degrees. Put sliced cheese on top of the pancake. Wait until the pancake is done on the underside and get your pancake out of the pan. Put some torn spinach on top with some smoked paprika powder.
Pancake II (chocolade-hazelnutpaste/blueberries/yogurt):
Repeat the steps of pancake I without adding the cheese. Instead of spinach and smoked paprika powder you add 1 tablespoon chocolate-hazelnutpaste, 1 tablespoon blueberries and 1 tablespoon yogurt on each pancake. Finish it in your own way: you can roll it up with the option of leaving a little bit open or fold it in half.
