This is a very nice combination for example for the lunch or for a picknick. Look after animal welfare too when you buy your cheese. And it differs, but cheese can be salty. For the taste you can therefore leave out the salt in the spread although it helps with conservation. You can of course make more spread to keep. If you want to use the spread for other things you can add a pinch of salt to the spread.
Extra supplies needed: a food processor
For 8 sandwiches:
– 8 slices of bread
– young cow cheese
– spinach
For the spread:
– 1 small leek
– 50 gram green lentils
– 1 teaspoon sunflower seed paste
– 1 teaspoon paprika powder
– 1/2 teaspoon chili powder
– olive oil
Rinse the lentils well too when you rinse your vegetables. Cook the lentils for around 30 minutes or according to the instructions on the package. Cut the leek into rings. Keep a few of the rings. Fry the leek on low to medium heat for around 8 minutes in a little bit of olive oil until they are soft. Slice cheese for the sandwiches.
Mix the leek, lentils, sunflower seed paste, paprika powder and chili powder in the food processor. Then add the remaining leek rings to the spread to have some whole leek in there.
Put the spread on the slices of bread. Put the cheese on the spread and the spinach on top. Put another slice of bread on there and cut the sandwiches in two.
