Quick Beetroot Wraps with Tofu, Pointed Cabbage and Celery

These wraps are very nice if you don’t have much time or don’t want to spent long in the kitchen but if you want something nice and to eat some vegetables and to not resort to fast food. You do use some pre-made wraps. If you have more time you can make them yourself of course. You have to cut some vegetables but these are prepared in 20 minutes. If you heat the wraps in the oven or microwave you only need one pan. These wraps are very suitable to take with you for lunch.


For 3 wraps (for the whole package of 6 wraps you can of course double the amounts):
– 3 beetroot wraps (or other wraps if you don’t have them)
– 250 gram tofu
– 1/3rd pointed cabbage
– 5 stalks celery
– 1/3rd green lettuce
– 1 big or 2 small onions
– 70 gram tomato paste
– 1 teaspoon thyme
– 1 teaspoon parsley
– olive oil

Optional: (plant-based) yogurt

Shred the onion. Press the water out of the tofu and dab off excess moisture with a paper towel. Cut the tofu in cubes. Start with frying the onion on low heat in a little olive oil for around 5 minutes until it’s soft.

Shred the pointed cabbage and cut the celery into small pieces. When your onion is soft you add the tofu to the pan. Fry around 5 minutes on medium heat.

Now warm the wraps according to the instructions on the package. You can use the microwave, oven or a pan. If you use the microwave you can wait with warming them but if you use the oven or a pan you have to start earlier.

Shred the green lettuce. Now add the tomato paste and the herbs to the pan and fry for around 5 minutes until all is warm.

Put some of the sauce on the wrap. On that you put some lettuce. If you want you can add some, around a tablespoon, of yogurt on top for more juicyness. Then you roll up your wrap and it’s ready to eat.
