This dish is quick and easy to make, healthy and very nice during this upcoming spring winter. The park has become very green during the last days. Also the season of the asparagus has started.
I’ve lived for a while in a room in a building with no own kitchen cabinets in the kitchen. In my room I had a fridge and a counter block. I’ve made a lot of couscous there, especially in the warmer months, with the help of my electric kettle. Then I could walk to the kitchen quick to warm something up to go with it. That was very good solution. I’ve also walked a lot to the kitchen with a lot more kitchen supplies because I really love cooking.
For 2-3 persons (main dish) or 4-6 persons (side dish):
– 200g whole-wheat spelt couscous
– 200g green asparagus
– 120g butter beans from a container
– 150g white cabbage
– 75g cucumber
– 50g turnip greens
– 50g green lettuce
– 1 tablespoon dried dill
– salt
– pepper
Prepare the couscous according to the instructions on the package. To save water and energy you can use the cooking moisture of the asparagus. If you want to start already on the couscous you can cook some new water. For this couscous I’ve used 350ml water but I would suggest to boil a little more to make sure you have enough.
Cut the end of the asparagus and cut them into four parts. Boil them for 5 minutes.
Shred the white cabbage. Fry it with the butter beans in a frying pan on low fire without oil. Don’t stir too often to make sure you keep the butter beans whole.
Cut the cucumber into pieces. Shred the turnip greens and the green lettuce.
Add the boiled water bit by bit to the couscous until it’s done but not too soft. Add the dill and the salt and pepper, according to taste, to the couscous.
Mix everything in a salad bowl. I would start with the lettuce, cucumber and turnip greens because they mix more easy.
If you have some salad remaining and you don’t want to eat the exact same the next day, or immediately, you can combine the salad with these seitan pieces and a sauce of soy-yogurt, mayonnaise, garlic powder and herb-butter herbs.
