This is very easy to make with a lot of flavour.
For 2 persons:
– 125g noodles. I used spelt noodles.
– 200g carrot (after removing the bottoms)
– 200g chestnut mushrooms
– 150g spinach
– 100g black beans (from a jar)
– 2 spring onions
– 2 tablespoons tomato paste
– 1 tablespoon garam masala spices
– 1/2 tablespoon ketjap manis
– 1/2 tablespoon soy sauce
– roasted sesame seeds
– 1/2 lemon
– peanut oil or other oil
Cut the carrot into slices. If your carrots are thick first halve the carrot lengthwise. Cut the chestnut mushrooms into slices.
Cook the noodles according to the instructions on the package. Roast the sesame seeds if needed.
Fry the chestnut mushrooms and carrots around 5 minutes on medium heat in the oil until the mushrooms are brown. In between you slice the spinach smaller and you shred the spring onions.
Add the beans, tomato paste, spices, ketjap manis and soy sauce to the vegetables. Let if warm for another 5 minutes.
Add the spinach to the pan with vegetables. Let warm for around 3 minutes until the spinach has shrunk.
Serve the noodles with the vegetables and some roasted sesame seeds and the spring onion. Squeeze some lemon juice over the plates or bowls.
