Many years ago I went to eat some sushi with friends on Kings Day after a visit to the free market. I had to think about that today. Time to eat some sushi again!
It’s nice that the asparagus fits exactly inside of a sushi roll. I used the Italian Arborio rice (risotto rice) instead of sushi rice. This is a cheaper and more local alternative. De rice is quite similar as sushi rice as a grain and they both become sticky. Where I was today a package of sushi rice of 500 gram costed almost 4 euros (non-organic) and I already had at least 5 different kinds of rice at home. So to use arborio rice was a very good idea. You can also use bulgur, see my previous recipe sushi with bulgur, broccoli, carrot, crunchy tofu, spinach and pear.
Also notice that I made this recipe at end of April. In the seasonal calendar you don’t see kohlrabi and bell pepper in April because they are probably not there for the most of April (from outside or out of a cold greenhouse).
The cost for this recipe can vary a lot according to stores, countries, quality and offers among other things but I estimate them around €3,50 a person for the ingredients.
Extra supplies needed: a sushi mat
For 2 persons (5 rolls with approximately 35 sushi’s):
– 200g Arborio rice
– 3 white asparagus
– 1/2 kohlrabi
– 1/2 yellow bell pepper
– 100g spinach tofu or normal tofu if you don’t have spinach tofu
– 2 spring onions
– 5 sheets nori
– 1 teaspoon apple vinegar
– 1/2 chopped ginger
– a drop agave syrup
– roasted sesame seeds
– a pinch of salt
– soy sauce
Cook the rice. Mostly this takes around 15 minutes.
Cut the bottom of the asparagus and peel them. Unlike green and purple asparagus you have to peel white asparagus. Cook them for around 10 minutes.
Cut the tofu into bars and fry them on high fire for around 5 minutes until they are golden brown.
Mix the apple vinegar, chopped ginger, agave syrup and a pinch of salt through the rice. Let the rice cool off.
Prepare a bowl of lukewarm water for the sushi rolling. You use the water to make your fingers wet so you can close the sushi rolls.
Wait until the rice is cooled off until you start rolling. If you need more instructions for rolling you can check out sushi with bulgur, broccoli, carrot, crunchy tofu, spinach and pear or other instructions to your preference. You can make normal rolls or inside-out rolls. Make different combinations according to your own imagination. Then cut the rolls into pieces.
Serve the sushi with some soy sauce.
