Hi, I’m Bente. Welcome to my recipe website. The name: “Red Mountain Recipes”, comes from my surname, Rotberg, which means Red Mountain. My love of cooking started when I moved out to the city to study when I was 17. It started easy with step-by-step instructions from the packages and easy recipes often accompanied by nice dinners with my student friends and developed into a full love of cooking.
I want to help people with cooking by the season with recipes based mostly on the seasons and the months in the temperate climate of northwestern Europe. I like to cook mostly with what the seasons offer me and to use good quality products sourced with love and passion as much as I can on a small budget and with what knowledge is available. The vegetables I use mostly come from my local organic vegetable bag. I cook on a two-burner stove, accompanied by a small oven and a grill. The recipes are low budget-friendly. I cook vegetarian almost exclusively and a lot is vegan as well. I like to cook in a balanced way which means healthy most of the time but satisfying and with making exceptions.
For the seasons I will stick to the calendar classification and not the meteorological classification for usability reasons. This means spring will start around the 21th of March, summer around the 21th of June etc.
For the seasons and months in the categories and tags I stick mostly to when the produce is fresh available (as far as I know). But since many ingredients are available out of cans and the freezer I make exceptions for this like when it’s an ingredient with a lesser role in the recipe, when it is a lot easier to get it out of a can or the freezer or other considerations. So the seasonal dividing lines are not hard: you will find recipes from other seasons which you can make with freezer or can ingredients.
Besides from cooking and eating I enjoy making music, dancing (ballet), writing (for example on my first fantasy novel), doing yoga, reading (mostly non-fiction), doing research, learning, running, spending time in nature and seeing places in the world while dreaming of and working towards a (food/vegetable) garden and world peace.
